- 4 large eggs
- 1 1/4 cup buttermilk, room temperature
- 1 cup hot water
- 7 1/2 cups powdered sugar
- 1 tsp peppermint extract
- 1/2 tsp salt (for frosting)
- 1/2 cup heavy cream (for frosting)
- 4 oz semisweet chocolate, chopped
- 2 packages Andes mints (40 bars)
Instructions
- Preheat your oven to 350°F and prepare three 8-inch cake pans with nonstick spray and parchment paper.
- In a large bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together oil, eggs, buttermilk, vanilla extract, and hot water.
- Combine wet and dry ingredients until just mixed.
- Divide the batter evenly among the prepared pans and bake for 24–27 minutes until a toothpick inserted comes out clean.
- Cool the cakes in their pans for about 10 minutes before transferring them to cooling racks.
- For the frosting, beat softened butter until fluffy. Gradually add sifted powdered sugar followed by peppermint extract and heavy cream until well combined.
- Assemble the cake by layering frosting between cooled cake layers and topping with additional frosting on the outside.
- Garnish with chopped Andes mints before serving.
