  • 1 3/4 cups granulated sugar
  • 2 1/2 tsp baking powder

  • 1 tsp salt
  • 3/4 cup oil (canola or vegetable)
  • 2 tsp pure vanilla extract
  • 4 large eggs
  • 1 1/4 cup buttermilk, room temperature
  • 1 cup hot water
  • 7 1/2 cups powdered sugar
  • 1 tsp peppermint extract
  • 1/2 tsp salt (for frosting)
  • 1/2 cup heavy cream (for frosting)
  • 4 oz semisweet chocolate, chopped
  • 2 packages Andes mints (40 bars)


Instructions

  1. Preheat your oven to 350°F and prepare three 8-inch cake pans with nonstick spray and parchment paper.
  2. In a large bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together oil, eggs, buttermilk, vanilla extract, and hot water.
  4. Combine wet and dry ingredients until just mixed.
  5. Divide the batter evenly among the prepared pans and bake for 24–27 minutes until a toothpick inserted comes out clean.
  6. Cool the cakes in their pans for about 10 minutes before transferring them to cooling racks.
  7. For the frosting, beat softened butter until fluffy. Gradually add sifted powdered sugar followed by peppermint extract and heavy cream until well combined.
  8. Assemble the cake by layering frosting between cooled cake layers and topping with additional frosting on the outside.
  9. Garnish with chopped Andes mints before serving.
