  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla
  • 2 medium apples (peeled, cored, and cut into 1/2 inch pieces)
  • 1/3 cup brown sugar
  • 1 tablespoon cinnamon


Instructions

  1. Preheat the oven to 350°F (180°C) and grease a 9 x 4 inch baking tin lined with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon; set aside.
  3. In a large bowl, cream together room temperature butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. Gradually add half of the dry ingredients to the wet mixture, followed by buttermilk and remaining dry ingredients; mix until just combined.
  5. Toss diced apples with brown sugar and remaining cinnamon. Layer half the batter into the prepared tin, add half the apple mixture, swirl gently with a knife, then repeat with remaining batter and apples.
  6. Bake for 55 to 65 minutes or until a toothpick inserted comes out clean. Cool in pan for 10 minutes before transferring to a cooling rack.
