Ingredients

  • 1/3 cup unsweetened plain plant-based yogurt
  • 3 tbsp apple butter
  • 3 tbsp gluten-free rolled oats
  • 2 apples (diced)
  • 1 medjool date
  • 3/4 cup soy milk
  • 1/3 cup chia seeds
  • 1 tsp yellow miso paste (optional)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp kosher salt
  • 2 tsp maple syrup


Instructions

  1. In a blender, combine the plant-based yogurt, apple butter, date, optional miso paste, vanilla extract, cinnamon, cardamom, salt, and soy milk. Blend until smooth.
  2. In a bowl or storage container, mix the chia seeds with the blended mixture. Let sit for 5 minutes to thicken, then whisk again and refrigerate for at least an hour.
  3. For the crumble topping, pulse together oats, nuts, and dates in a mini food processor until crumbly.
  4. Prepare the stewed apples by sautéing diced apples with maple syrup and cinnamon until tender.
  5. To serve, layer chia pudding in jars and top with stewed apples and crumble mixture.
