- 1/3 cup unsweetened plain plant-based yogurt
- 3 tbsp apple butter
- 3 tbsp gluten-free rolled oats
- 2 apples (diced)
- 1 medjool date
- 3/4 cup soy milk
- 1/3 cup chia seeds
- 1 tsp yellow miso paste (optional)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp kosher salt
- 2 tsp maple syrup
Instructions
- In a blender, combine the plant-based yogurt, apple butter, date, optional miso paste, vanilla extract, cinnamon, cardamom, salt, and soy milk. Blend until smooth.
- In a bowl or storage container, mix the chia seeds with the blended mixture. Let sit for 5 minutes to thicken, then whisk again and refrigerate for at least an hour.
- For the crumble topping, pulse together oats, nuts, and dates in a mini food processor until crumbly.
- Prepare the stewed apples by sautéing diced apples with maple syrup and cinnamon until tender.
- To serve, layer chia pudding in jars and top with stewed apples and crumble mixture.
