  • 3/4 cup sugar
  • 1/2 cup sour cream
  • 2 very ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1 egg
  • For the brown butter icing: 2 cups powdered sugar
  • 1 1/2 tbsp milk
  • 1 tsp vanilla extract


Instructions

  1. Preheat your oven to 375°F (190°C) and line an 8×8 baking dish with parchment paper.
  2. In a mixing bowl, beat together the sugar, sour cream, softened butter, and egg until creamy. Stir in the mashed bananas and vanilla extract.
  3. Add the flour, baking soda, and salt; mix until just combined.
  4. Spread the batter evenly in the prepared baking pan and bake for 20-25 minutes or until golden brown on top.
  5. To prepare the icing, melt butter in a saucepan over medium heat until it turns golden brown. Pour into a bowl and whisk in powdered sugar, milk, and vanilla until smooth.
  6. Once the bars have cooled slightly (10-15 minutes), frost them with the brown butter icing.
