  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup brown sugar
  • 2 large eggs

  • ½ teaspoon salt


Instructions

  1. Preheat your oven to 160°C (320°F) for fan mode or 180°C (355°F) for standard mode. Grease and line your loaf tin with baking paper.
  2. In a large mixing bowl, mash the overripe bananas. Add canola oil, milk, both sugars, eggs, and vanilla extract; mix until well combined.
  3. Sift in plain flour, baking powder, and salt. Stir gently until just combined; some lumps are fine.
  4. Pour the batter into the prepared loaf tin and bake for 45-55 minutes until golden brown and a skewer inserted comes out clean.
  5. Let cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
