  • 2 medium ripe bananas
  • 1/2 cup natural creamy peanut butter
  • 1/2 cup pure maple syrup
  • 3 Tbsp. coconut oil, melted
  • 2 cups old-fashioned rolled oats
  • Optional: 1/2 cup chocolate chips or dried fruit


Instructions

  1. Preheat the oven to 350ºF (175ºC). Line an 8×8" baking dish with parchment paper.
  2. In a mixing bowl, mash the ripe bananas thoroughly with a fork.
  3. Mix in the peanut butter, maple syrup, melted coconut oil until well combined.
  4. Stir in old-fashioned rolled oats and optional chocolate chips or dried fruit until evenly mixed.
  5. Pour the mixture into the prepared baking dish and bake for 28 to 32 minutes until set.
  6. Allow to cool for at least 30 minutes before slicing into twelve bars.
