Ingredients

  • 1 kg beetroot
  • 2 oranges
  • 3 apples (peeled and chopped)
  • 3 onions (finely chopped)
  • 2 garlic cloves (crushed)
  • 500 ml apple cider vinegar
  • 400 g brown sugar
  • 1 tbsp salt
  • 4 cloves
  • 1 bay leaf
  • 1 cinnamon stick
  • 1 tsp grated fresh ginger
  • 2 chillis (chopped)


Instructions

  1. Peel the beetroot and chop it into small cubes about 1cm in size.
  2. Grate the zest off the oranges. Remove the white pith and slice into segments to get just the flesh. Reserve any juice you can collect.
  3. Place all of the ingredients into a large saucepan.
  4. Heat slowly until the sugar dissolves completely.
  5. Raise the heat to bring it to a boil.
  6. Lower the heat to let it simmer for approximately one hour until all fruit is soft.
  7. Use a potato masher to break down any larger pieces.
  8. Remove the bay leaf and cinnamon stick from the mixture.
  9. Spoon your chutney into sterilized jars while hot.
  10. Seal with lids immediately to maintain freshness.
