- 1 tsp salt
- 3/4 cup unsalted butter, cold and cut into pieces
- 1/4 cup shortening
- 1/4 cup ice water
- 12 ounces fresh blackberries
- 1/2 cup sugar
- 2 tsp Instant Clearjel thickener (or 1 Tbsp cornstarch)
- Juice of 1/2 lemon
- 1 cup confectioner’s sugar
Instructions
- Preheat your oven to 350°F.
- In a food processor, pulse together the flour and salt. Add cold butter and shortening; pulse until grainy.
- Gradually add ice water until dough forms. Chill for at least 2 hours.
- For the filling, cook blackberries, sugar, Clearjel, and lemon juice in a saucepan over medium heat until soft.
- Roll out the chilled dough on parchment paper into a rectangle. Spoon blackberry filling onto the dough.
- Cover with another layer of rolled-out dough, seal edges, and brush with egg wash.
- Bake for about 40 minutes until golden brown. Cool before glazing with confectioner’s sugar mixed with water.
