  • 1 cup light cream or half & half
  • 3 egg yolks
  • 1/4 cup granulated sugar
  • 1 1/2 tablespoons cornstarch
  • Pinch of salt
  • 2 tablespoons butter, cubed
  • 1 1/2 teaspoons vanilla extract
  • 3-4 (5×4-inch) croissants
  • 3 ounces semi-sweet or bittersweet chocolate bar, chopped into small chunks
  • 1/4 cup light cream or half & half for ganache
  • 3-4 tablespoons chopped nuts (almonds, pecans, or walnuts) for garnish


Instructions

  1. Prepare the pastry cream: In a saucepan, whisk together sugar, cornstarch, and salt. Add egg yolks and whisk until thickened. Gradually add light cream or half & half. Cook over medium heat while stirring until thickened. Remove from heat; stir in butter and vanilla. Let cool completely in a bowl covered with plastic wrap in the refrigerator for at least one hour.
  2. Slice each croissant horizontally to create pockets and fill generously with chilled pastry cream.
  3. Make the ganache: In a heatproof bowl over simmering water, combine chopped chocolate and light cream or half & half until melted and smooth. Let cool slightly.
  4. Spoon ganache over filled croissants and sprinkle chopped nuts on top while ganache is still wet.
  5. Let set at room temperature for about 15-20 minutes before serving.
