- 1 cup light cream or half & half
- 3 egg yolks
- 1/4 cup granulated sugar
- 1 1/2 tablespoons cornstarch
- Pinch of salt
- 2 tablespoons butter, cubed

- 3-4 (5×4-inch) croissants
- 3 ounces semi-sweet or bittersweet chocolate bar, chopped into small chunks
- 1/4 cup light cream or half & half for ganache
- 3-4 tablespoons chopped nuts (almonds, pecans, or walnuts) for garnish
Instructions
- Prepare the pastry cream: In a saucepan, whisk together sugar, cornstarch, and salt. Add egg yolks and whisk until thickened. Gradually add light cream or half & half. Cook over medium heat while stirring until thickened. Remove from heat; stir in butter and vanilla. Let cool completely in a bowl covered with plastic wrap in the refrigerator for at least one hour.
- Slice each croissant horizontally to create pockets and fill generously with chilled pastry cream.
- Make the ganache: In a heatproof bowl over simmering water, combine chopped chocolate and light cream or half & half until melted and smooth. Let cool slightly.
- Spoon ganache over filled croissants and sprinkle chopped nuts on top while ganache is still wet.
- Let set at room temperature for about 15-20 minutes before serving.
