  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion (chopped)
  • 3/4 cup chicken broth
  • 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese (softened)
  • Optional: 1-2 tablespoons chopped parsley


Instructions

  1. Cut chicken breasts in half lengthwise to create thinner pieces. Season with garlic powder, salt, and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat. Add seasoned chicken and cook for 5-6 minutes on each side until cooked through.
  3. Remove chicken from the skillet and set aside. In the same skillet, sauté chopped onions for about 5 minutes until softened.
  4. Pour in chicken broth and add softened Boursin cheese, stirring until smooth. Let it bubble for about 5 minutes.
  5. Return the chicken to the skillet along with any juices from the plate. Heat through until thickened, adding more broth if needed.
  6. Taste and adjust seasoning before serving; garnish with parsley if desired.
