  • 2 packages (6 ounces each) Driscolls raspberries
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup orange juice
  • 2 slices sourdough or French bread
  • 2 tablespoons mayonnaise
  • 2 ounces brie cheese, at room temperature
  • 4 slices manchego cheese, white cheddar cheese, or provolone cheese


Instructions

  1. In a small saucepan, combine raspberries, sugar, vanilla extract, and orange juice. Cook over medium heat until boiling, then reduce to medium-low and simmer for about 15-20 minutes until thickened. Cool to room temperature.
  2. Spread mayonnaise on one side of each slice of bread. Layer brie on the unbuttered side of one slice, followed by raspberry compote and your choice of additional cheese. Top with the second slice of bread, mayonnaise side out.
  3. Heat a skillet over medium heat and grill the sandwich for about 3-4 minutes per side until golden brown and crispy.
