- 8 Russet potatoes, peeled and diced
- ¼ cup buffalo sauce
- 2 tablespoons extra virgin olive oil
- 2 pounds boneless, skinless chicken breasts, cut into pieces
- 1 cup mild cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 8-10 slices turkey bacon, cooked and crumbled
Instructions
- Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- In a mixing bowl, combine buffalo sauce, olive oil, ranch seasoning, and black pepper. Add the diced potatoes and toss until well-coated.
- Spread the coated potatoes in a single layer on the prepared baking sheet. Bake for about 30 minutes until golden brown.
- While baking, mix cut chicken pieces with additional buffalo sauce if desired.
- After 30 minutes, remove potatoes from the oven and top them with the marinated chicken.
- Sprinkle shredded cheeses and crumbled turkey bacon over everything.
