- 4 cups chopped green cabbage
- 2 medium carrots (quartered and sliced)
- 4 cups low-sodium beef broth
- 3 cans (8 oz each) tomato sauce
- 1/2 cup uncooked white rice
- 1 bay leaf
- 3 tbsp light brown sugar
- 2 tbsp fresh parsley (chopped)
Instructions
- Heat the vegetable oil in a large soup pot over medium-high heat. Brown the ground beef, seasoning with salt and pepper.
- Add the diced onion and minced garlic, cooking until the onion is tender, about 2-3 minutes.
- Stir in the chopped cabbage, sliced carrots, tomato sauce, beef broth, uncooked rice, bay leaf, and brown sugar until combined.
- Bring to a simmer and cook for approximately 25 minutes until the rice is tender.
- Remove the bay leaf and garnish with fresh parsley before serving.
