- 4 large sweet onions, thinly sliced
- 2 medium leeks, sliced (light green and white parts)
- 1 teaspoon salt (divided)
- 1 teaspoon dried thyme
- 2 tablespoons all-purpose flour
- 1/3 cup dry apple vinegar
- 4 cups vegetable broth
- 2 cups milk
Instructions
- Preheat your oven to 350°F.
- Wrap the garlic head in foil after coating it with ½ tablespoon olive oil. Roast for about 1 hour.
- In a large pot, heat the remaining olive oil over medium heat. Add onions and leeks, cooking uncovered until caramelized (about 60 minutes). Stir occasionally and season with salt and thyme.
- Stir in flour; cook for 1 minute before adding apple vinegar and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Blend the roasted garlic cloves with the onion mixture until smooth.
- Return to pot, add milk, and simmer for an additional 8 minutes before serving.
