  • 1 large head of garlic
  • 1 ½ tablespoons olive oil
  • 4 large sweet onions, thinly sliced
  • 2 medium leeks, sliced (light green and white parts)
  • 1 teaspoon salt (divided)
  • 1 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 1/3 cup dry apple vinegar
  • 4 cups vegetable broth
  • 2 cups milk


Instructions

  1. Preheat your oven to 350°F.
  2. Wrap the garlic head in foil after coating it with ½ tablespoon olive oil. Roast for about 1 hour.
  3. In a large pot, heat the remaining olive oil over medium heat. Add onions and leeks, cooking uncovered until caramelized (about 60 minutes). Stir occasionally and season with salt and thyme.
  4. Stir in flour; cook for 1 minute before adding apple vinegar and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Blend the roasted garlic cloves with the onion mixture until smooth.
  6. Return to pot, add milk, and simmer for an additional 8 minutes before serving.
