  • 12 oz spaghetti
  • lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 7 cloves garlic
  • 1 tsp Italian seasoning
  • ½ tsp dried parsley
  • ½ tsp cracked black pepper
  • ¾ tsp salt, divided
  • 1½ cups heavy cream
  • ½ cup evaporated milk
  • 10 oz Velveeta cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp cornstarch mixed with 1 tbsp milk
  • 2 tbsp reserved pasta water
  • Fresh parsley, finely chopped


Instructions

  1. Cook spaghetti in salted boiling water until tender; reserve some pasta water before draining.
  2. Season chicken with salt, pepper, Italian seasoning, and parsley.
  3. Heat olive oil and 4 tablespoons of butter in a skillet over medium-high heat; cook seasoned chicken until golden brown and cooked through. Remove and keep warm.
  4. In the same skillet, add remaining butter and garlic; cook until fragrant.
  5. Stir in heavy cream and evaporated milk, scraping up browned bits from the pan.
  6. Thicken the sauce with cornstarch mixed with milk.
  7. Gradually add Velveeta cubes and Parmesan cheese until melted and smooth.
  8. Toss in cooked spaghetti with reserved pasta water until well coated.
  9. Serve hot garnished with fresh parsley.
