  • 4 cups shredded cooked chicken
  • 1 quart chicken stock
  • Fresh thyme and black pepper (to taste)
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3/4 cup whole milk
  • 4 tablespoons melted butter


Instructions

  1. In a heavy-bottomed pot, melt butter over medium-high heat. Add onion, carrots, and celery; cook for 5 minutes until softened. Stir in garlic and cook for an additional minute.
  2. Mix in flour to create a roux; cook for one minute while stirring. Gradually add evaporated milk and chicken stock, stirring well to avoid lumps.
  3. If using raw chicken, add it along with an extra cup of broth; simmer for about 20 minutes until fully cooked. Shred chicken before returning it to the soup. If using pre-cooked chicken, bring soup to a boil after adding it along with seasoning; then reduce heat and simmer.
  4. In a bowl, combine dumpling ingredients until just mixed—don’t overmix.
  5. Drop spoonfuls of batter into simmering soup, cover tightly with a lid, and cook for about 15 minutes without lifting the lid.
