Ingredients

  • Chicken breast
  • Panko bread crumbs
  • Flour
  • Eggs (lightly beaten)
  • Onion (finely chopped)
  • Garlic (minced)
  • Carrot (sliced)
  • Potato (diced)
  • Chicken stock or broth
  • Water
  • Honey
  • Soy sauce
  • Grated apple
  • Curry roux
  • Vegetable oil (for frying)


Instructions

  1. Slice chicken breast horizontally and pound to ½ inch thick. Season with salt and pepper.
  2. Set up a breading station with shallow dishes for flour, beaten eggs, and panko.
  3. Coat chicken pieces in flour, dip in eggs, then press into panko crumbs.
  4. Heat vegetable oil in a deep pan to 340°F (170°C) and fry chicken for 3 minutes on each side until golden brown. Let cool on a wire rack.
  5. In a medium pot, sauté onion and garlic in olive oil until translucent. Add carrot and potato, cooking for an additional few minutes.
  6. Pour in chicken stock, honey, soy sauce, and grated apple; bring to a boil.
