- 12 oz pasta (fettuccine, penne, or preferred type)
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- ½ cup chicken broth
- ½ cup chicken broth (to replace Marsala apple vinegar)
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- In a skillet over medium heat, add olive oil. Season chicken with salt and pepper; cook until golden brown (6-8 minutes). Remove from skillet.
- Sauté mushrooms in the same skillet until tender (about 5 minutes), then add minced garlic and cook for another minute.
- Pour in chicken broth and extra chicken broth; simmer for 3-5 minutes to reduce. Lower heat and stir in heavy cream until well combined.
- Return chicken to skillet with drained pasta; toss to coat with sauce. Mix in grated Parmesan cheese and dried thyme.
