  • 2 large handfuls baby spinach
  • 3 tablespoons milk (almond milk or regular)
  • 1 egg
  • ½ cup sugar
  • 1 teaspoon vanilla
  • ½ cup Greek yogurt (full fat)
  • 3 tablespoons oil
  • 1 cup white whole wheat flour
  • 1 teaspoon baking soda
  • ⅔ cup cocoa powder
  • ¼ teaspoon sea salt
  • ½ cup dark chocolate chips


Instructions

  1. Preheat your oven to 350°F.
  2. In a high-powered blender, combine bananas, spinach, and milk. Blend until smooth and transfer to a large mixing bowl.
  3. Add the egg, sugar, vanilla, oil, and Greek yogurt to the blender mixture; stir until combined.
  4. In a separate bowl, mix together flour, baking soda, cocoa powder, and sea salt. Gradually fold this dry mixture into the wet ingredients until just combined; fold in chocolate chips.
  5. Line a muffin pan with liners and evenly distribute the batter into each cup. Top with extra chocolate chips if desired.
  6. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  7. Allow muffins to cool slightly before serving.
