  • 3 cups cooked white rice (or brown rice)
  • 2 cups shredded cooked chicken (or turkey)
  • 1 can cream of chicken soup
  • 1 can French onion soup
  • 1 cup sour cream (or dairy-free yogurt)
  • 1 cup shredded cheese (Mozzarella or Swiss)
  • 1 cup French fried onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste black pepper
  • 1/4 cup chopped parsley (for garnish)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, garlic powder, onion powder, salt, and black pepper.
  3. Transfer half of the mixture into a greased casserole dish and sprinkle half of the shredded cheese on top.
  4. Add the remaining mixture followed by the rest of the cheese.
  5. Top with French fried onions.
  6. Bake for about 35 minutes until heated through and golden on top.
  7. Garnish with chopped parsley before serving.
