Ingredients

  • 2 tablespoons protein powder (optional)
  • 1/4 cup cashew butter (or any nut/seed butter)
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup (or honey)
  • 1 1/2 cups chocolate chips
  • 2 tablespoons coconut oil


Instructions

  1. In a mixing bowl, combine non-dairy yogurt, protein powder (if using), cashew butter, vanilla extract, and maple syrup. Mix until smooth.
  2. Stir in mini chocolate chips evenly throughout the mixture.
  3. Line a baking sheet with parchment paper and scoop dollops of the mixture onto it using a medium-large cookie scoop.
  4. Freeze the bites for at least 1 hour until solid.
  5. Melt chocolate chips and coconut oil together in a microwave-safe bowl or double boiler until smooth.
  6. Dip each frozen yogurt bite into the melted chocolate to coat fully and return them to the baking sheet.
  7. Freeze again for an additional 30 minutes to harden before serving.
