  • 2 rings (13 ounces each) turkey sausage, sliced
  • 3 tablespoons unsalted butter
  • 1 large yellow onion, chopped
  • 2 medium carrots, diced
  • 2 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup whole milk
  • 2 cans Great Northern white beans, rinsed and drained
  • Fresh parsley for garnish


Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Add sliced turkey sausage and cook until browned (7–9 minutes). Remove and set aside.
  2. In the same pot, melt butter and sauté onion, carrots, garlic, salt, and pepper until softened (10–12 minutes).
  3. Stir in flour and cook for an additional minute to eliminate raw taste.
  4. Gradually add chicken broth and milk; stir until combined and bring to a gentle simmer.
  5. Return sausage to the pot along with rinsed beans; stir gently.
  6. Simmer on medium-low heat for about 15–20 minutes until thickened.
