- 2 rings (13 ounces each) turkey sausage, sliced
- 3 tablespoons unsalted butter
- 1 large yellow onion, chopped
- 2 medium carrots, diced
- 2 teaspoons garlic, minced
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ cup all-purpose flour
- 3 cups chicken broth
- 1 cup whole milk
- 2 cans Great Northern white beans, rinsed and drained
- Fresh parsley for garnish
Instructions
- Heat vegetable oil in a large pot over medium-high heat. Add sliced turkey sausage and cook until browned (7–9 minutes). Remove and set aside.
- In the same pot, melt butter and sauté onion, carrots, garlic, salt, and pepper until softened (10–12 minutes).
- Stir in flour and cook for an additional minute to eliminate raw taste.
- Gradually add chicken broth and milk; stir until combined and bring to a gentle simmer.
- Return sausage to the pot along with rinsed beans; stir gently.
- Simmer on medium-low heat for about 15–20 minutes until thickened.
