  • 10 oz linguine pasta
  • lbs boneless, skinless chicken breasts (2 medium)
  • 1½ tbsp olive oil
  • 1½ tbsp unsalted butter
  • 1½ tbsp Cajun seasoning (plus more to taste)
  • 4 cloves garlic, minced
  • 1¾ cups heavy cream
  • 7 oz Velveeta cheese, cubed
  • ¾ cup shredded mozzarella
  • ⅓ cup grated Parmesan
  • ½ tsp smoked paprika
  • ¼ tsp black pepper
  • ¼ tsp kosher salt, or to taste
  • 1 tbsp chopped fresh parsley


Instructions

  1. Cook linguine in a large pot of salted boiling water until al dente. Drain and lightly drizzle with olive oil.
  2. Slice chicken breasts thinly and season with Cajun seasoning on both sides.
  3. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken for 5–6 minutes per side until golden brown. Remove and let rest before slicing.
  4. In the same skillet, reduce heat and sauté minced garlic until fragrant. Add heavy cream and stir in Velveeta until melted.
  5. Mix in mozzarella, Parmesan, smoked paprika, black pepper, and salt; adjust seasoning as needed.
  6. Toss cooked linguine in the sauce until thoroughly coated. Serve topped with sliced chicken and fresh parsley.
