  • 12 oz penne pasta
  • lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1½ cups heavy cream
  • ¾ cup whole milk
  • 1 cup shredded mozzarella cheese
  • ¾ cup shredded cheddar cheese
  • ¾ cup grated Parmesan cheese
  • 2 tsp Cajun seasoning
  • ½ tsp paprika
  • Salt and black pepper, to taste


Instructions

  1. Cook penne pasta according to package instructions until al dente. Drain and set aside.
  2. Season chicken pieces with Cajun seasoning, paprika, salt, and pepper.
  3. In a skillet, heat olive oil and half the butter over medium-high heat. Sear the chicken until golden brown and cooked through. Remove from skillet.
  4. In the same skillet, reduce heat to medium and add remaining butter. Sauté minced garlic until fragrant.
  5. Stir in heavy cream and milk; let simmer for a few minutes to thicken.
  6. Gradually add mozzarella, cheddar, and Parmesan cheeses while stirring until smooth.
  7. Toss cooked penne in the sauce until fully coated. Serve with chicken on top or alongside.
