  • 12 oz linguine pasta
  • 1 1/2 lb boneless skinless chicken breasts, cut into bite-size pieces
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup chicken broth
  • 2 cups heavy cream
  • 4 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • Chopped parsley for garnish (optional)


Instructions

  1. Cook linguine in a large pot of salted boiling water until al dente; drain and set aside.
  2. Season chicken pieces with garlic powder, Italian seasoning, salt, and pepper.
  3. In a skillet over medium-high heat, heat olive oil and 1 tbsp butter. Add chicken and cook until browned (about 5–6 minutes). Transfer to a plate.
  4. Reduce heat to medium, add remaining butter and sauté onions until softened (about 3 minutes). Stir in minced garlic for another 30 seconds.
  5. Sprinkle flour over the onion mixture; cook for 1 minute while stirring continuously. Gradually whisk in chicken broth and heavy cream until smooth.
  6. Stir in cream cheese until melted, then add cheddar and Parmesan cheeses, stirring until sauce is thickened.
  7. Return cooked chicken along with juices to skillet; add linguine and toss gently to coat evenly with sauce.
