  • 2 Tbsp unsalted butter
  • ½ tsp salt
  • 16 oz button mushrooms
  • 10 oz cherry tomatoes
  • 4 cloves garlic (minced)
  • ½ cup sun-dried tomatoes (chopped)
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 2 Tbsp fresh chopped basil


Instructions

  1. In a large sauté pan over medium heat, melt the butter and add salt, oregano, crushed red pepper flakes, smoked paprika, and black pepper. Cook until fragrant.
  2. Add the button mushrooms, cherry tomatoes, minced garlic, and sun-dried tomatoes. Cook uncovered for about 15 minutes until the mushrooms have released their moisture.
  3. Stir in the vegetable broth and let simmer until thickened (around 10 minutes).
  4. Remove from heat and mix in the heavy cream, grated parmesan cheese, and fresh basil. Serve warm over pasta, rice, or with crusty bread.
