Description

Crispy Lebanese Arayes are a delightful fusion of savory ground lamb and aromatic spices, enveloped in golden, crunchy pita bread.   • 1 lb ground lamb or beef
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup flat-leaf parsley, finely chopped
  • 1 medium tomato, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 4 large Lebanese-style pita breads
  • Olive oil for brushing
  • ½ cup grated Gruyere cheese


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the ground lamb or beef with onion, garlic, parsley, tomato, cumin, coriander, salt, and pepper. Mix well.
  3. Cut each pita bread in half to create pockets and stuff each generously with the meat mixture.
  4. Place on a baking sheet lined with parchment paper and brush both sides with olive oil.
  5. Bake for about 15 minutes until golden brown and crispy. Optionally add cheese during the last few minutes of baking.
