- 1 lb ground lamb or beef
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- ½ cup flat-leaf parsley, finely chopped
- 1 medium tomato, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 4 large Lebanese-style pita breads
- Olive oil for brushing
- ½ cup grated Gruyere cheese
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the ground lamb or beef with onion, garlic, parsley, tomato, cumin, coriander, salt, and pepper. Mix well.
- Cut each pita bread in half to create pockets and stuff each generously with the meat mixture.
- Place on a baking sheet lined with parchment paper and brush both sides with olive oil.
