  • 1 tsp garlic powder

  • 1 cup frozen corn
  • 2 (10 oz) cans fire-roasted tomatoes with green chiles
  • 2 (15 oz) cans cannellini beans
  • 1/2 cup buffalo sauce
  • 2 cups low sodium chicken broth
  • 4 oz cream cheese (room temperature)
  • 4 oz blended cottage cheese


Instructions

  1. Gather all ingredients.
  2. In a slow cooker, add all ingredients except cream cheese and cottage cheese; stir to combine.
  3. Cover and cook on low for 4-6 hours or high for 3-4 hours until chicken is cooked through.
  4. Remove chicken, shred using forks or mixer, then return to the pot.
  5. Add cream cheese; whisk until smooth. Cook on low for another 30 minutes.
  6. Stir in blended cottage cheese before serving.
