  • 18 oz all-purpose flour (just over 4 cups)
  • ¼ cup + 1 Tbsp granulated sugar
  • 2½ tsp fine sea salt
  • 1 Tbsp + 1/2 tsp instant yeast
  • ½ cup + 2 Tbsp cold water
  • ½ cup + 2 Tbsp cold whole milk
  • 3 Tbsp softened unsalted butter
  • 1¼ cups cold unsalted butter (for layering)
  • 1 large egg
  • 1 egg yolk
  • Pinch of salt


Instructions

  1. In a large bowl, combine flour, sugar, salt, and yeast. In another bowl, mix cold water and milk; gradually add to dry ingredients until a dough forms.
  2. Knead on a floured surface for about 5 minutes until smooth; shape into a ball and let rest covered for 30 minutes.
  3. Shape the cold unsalted butter into a rectangle between parchment paper. Chill while rolling out the dough into a rectangle twice the size of the butter layer.
  4. Encase the butter in the dough by folding over both sides; roll out gently. Repeat this folding process three times to create flaky layers.
  5. Roll out again into a large rectangle and cut triangles; roll each triangle from base to tip to form croissants.
  6. Place on baking sheets lined with parchment paper and let rise until doubled in size (about an hour).
  7. Preheat oven to 400°F (200°C). Brush croissants with egg wash mixture before baking for about 20 minutes until golden brown.
