  • 6 tablespoons melted salted butter
  • 16 ounces softened cream cheese
  • 3/4 cup granulated sugar
  • 1 teaspoon coffee extract
  • 3 large eggs (room temperature)
  • 1 cup heavy cream (or non-dairy alternative)
  • 1/2 cup cold brew coffee
  • 8 ounces chopped bittersweet chocolate (for ganache)


Instructions

  1. Preheat the oven to 325°F (160°C). Combine crushed Oreos and melted butter in a bowl; press into the bottom of a springform pan.
  2. Beat softened cream cheese and granulated sugar until smooth; add coffee extract and mix well.
  3. Incorporate eggs one at a time, followed by heavy cream and cold brew coffee. Mix in lemon juice, salt, and flour if using.
  4. Pour filling over the crust; bake for about 85 minutes until set but slightly jiggly in the center. Cool in the oven with the door slightly ajar for an hour.
  5. Refrigerate covered for at least 4 hours or overnight.
