- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 8 flour tortillas
- 1 can (10 oz) red enchilada sauce
- 2 cups shredded Monterey Jack cheese
- Chopped cilantro for garnish
Instructions
- Prepare the chicken by boiling or baking until fully cooked; shred using two forks.
- In a skillet over medium heat, sauté chopped onion and minced garlic in vegetable oil until soft (about 3-4 minutes).
- Add shredded chicken to the skillet; season with cumin, chili powder, salt, and pepper. Stir well and cook for an additional 3-5 minutes.
- Preheat the oven to 375°F (190°C). Pour a small amount of red enchilada sauce into the bottom of a baking dish.
- Assemble enchiladas by placing a spoonful of chicken mixture and cheese in each tortilla. Roll tightly and place seam side down in the baking dish.
- Pour remaining enchilada sauce over the rolled enchiladas and sprinkle with cheese. Cover with foil and bake for 20-25 minutes; uncover and bake an additional 5-10 minutes until bubbly.
