  • ½ cup dried cherries
  • 1 cup Dr. Pepper soda
  • 2 sticks (226g) unsalted butter
  • ¼ cup (30g) cocoa powder
  • ½ cup (118g) boiling water
  • ½ cup (120g) buttermilk
  • 3 large eggs
  • 1 teaspoon baking soda
  • 1½ teaspoons vanilla extract
  • 2 cups (256g) all-purpose flour
  • 1⅓ cups (267g) granulated sugar
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • ½ teaspoon all spice
  • 4 cups Dr. Pepper soda (for frosting)
  • 1½ cups (3 sticks or 339g) butter (for frosting)
  • 1 teaspoon ground ginger (for frosting)
  • 2½ cups (312g) confectioners’ sugar
  • 1 teaspoon vanilla (for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, sift together cocoa powder, flour, baking soda, nutmeg, ginger, and all spice; set aside.
  3. In another bowl, beat unsalted butter and granulated sugar until fluffy. Add eggs one at a time, followed by buttermilk and vanilla extract. Mix in prunes and dried cherries.
  4. Slowly stir in Dr. Pepper soda and boiling water until fully combined.
  5. Gradually fold dry ingredients into the wet mixture until just combined.
  6. Pour batter into the prepared pan and bake for about 34 minutes or until a toothpick comes out clean.
  7. Allow to cool completely before frosting.
