  3. Place the bowl over the simmering water and whisk continuously for about 20-25 minutes until thickened.
  4. Check doneness by ensuring the mixture coats the back of a spoon or reaches 170°F.
  5. Strain through a fine mesh sieve into a glass bowl to achieve smoothness.
  6. Allow the curd to cool at room temperature before refrigerating for at least 4 hours.
