  • 1/4 cup granulated sugar
  • 1 2/3 cups powdered sugar

  • 1 cup finely ground almond flour

  • 3 egg yolks
  • 4 tbsp unsalted butter
  • 1/2 cup fresh lemon juice
  • Zest from 1 lemon
  • 1 tbsp cornstarch
  • 1/4 tsp table salt


Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a stand mixer, whip egg whites until soft peaks form. Gradually add granulated sugar until stiff peaks form.
  3. Sift powdered sugar, almond flour, and cream of tartar together; gently fold into the whipped egg whites until combined.
  4. Pipe small circles onto prepared baking sheets and let them rest until they form a skin (about 20 minutes).
  5. Bake for 15-20 minutes or until shells are firm. Cool completely before removing from sheets.
  6. For the filling, whisk together egg yolks, lemon juice, zest, sugar, cornstarch, and salt in a saucepan over medium heat until thickened. Stir in butter until smooth.
  7. Assemble macarons by piping lemon filling between two shells.
