  • 12 oz fresh strawberries (hulled)
  • 16 oz fresh strawberries (hulled and halved)
  • 1/4 cup granulated sugar (or to taste)
  • 1 tsp powdered sugar (for dusting)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a mixing bowl, whisk together the eggs, sugar, sour cream, olive oil, and vanilla extract until smooth.
  3. In another bowl, combine flour, baking powder, and salt. Gradually add to the wet mixture until just combined; do not overmix.
  4. Fold in hulled strawberries gently.
  5. Pour batter into the prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
  6. For the sauce, combine halved strawberries and sugar in a saucepan over medium heat until juices are released.
