Ingredients
- 2 cups sugar
- 1 cup softened butter
- 3 large eggs
- 2 1/2 cups cake flour
- 1 cup baking cocoa (sifted)
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup instant chocolate pudding mix (small box)
- 2 1/4 cups buttermilk
- 1 cup semi-sweet chocolate chips
- 1/2 cup water
- 1 teaspoon vanilla
- 3 1/2 cups powdered sugar
- 3 tablespoons heavy cream (more or less for consistency)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans.
- In a large mixing bowl, combine cake flour, baking cocoa, baking soda, and salt. Whisk until well blended and set aside.
- In another bowl, beat together softened butter and sugar with an electric mixer until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In a separate bowl, mix together buttermilk and instant pudding mix until smooth. Gradually add this mixture to the butter-sugar mixture while mixing on low speed.
- Gradually add the dry ingredient mixture into the wet ingredients and mix until just combined; do not overmix.
- Divide the batter evenly between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Let cakes cool in pans for about 10 minutes before transferring them onto a cooling rack.
- For ganache icing, melt butter with water over low heat. Once melted, stir in chocolate chips until smooth. Add vanilla extract, sifted baking cocoa, powdered sugar, and cream, mixing until creamy.
- Once cakes are completely cooled, place one layer on a serving plate and spread some ganache on top. Place the second layer on top and cover with remaining ganache icing.
