Ingredients
- 140g feta cheese
- 100g Greek yogurt
- 3 small to medium beets
- ½ tablespoon olive oil
- ¼ lemon juice
- 1 handful chopped roasted pistachios
- Fresh dill, chopped
- Sea salt and black pepper to taste
Instructions
- Cook the beets: Cut them in half and boil in salted water for about 20 minutes until tender.
- Prepare the feta mixture: While the beets cook, whisk together feta, Greek yogurt, and lemon juice until smooth.
