  • 100g Greek yogurt
  • 3 small to medium beets
  • ½ tablespoon olive oil
  • ¼ lemon juice
  • 1 handful chopped roasted pistachios
  • Fresh dill, chopped
  • Sea salt and black pepper to taste


Instructions

  1. Cook the beets: Cut them in half and boil in salted water for about 20 minutes until tender.
  2. Prepare the feta mixture: While the beets cook, whisk together feta, Greek yogurt, and lemon juice until smooth.
  3. Marinate the beets: Once cooked and cooled, combine vinegar with date syrup and olive oil in a small bowl. Coat sliced beets in marinade for 5 minutes.
