Ingredients

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk
  • 1 cup unsalted butter (softened)
  • 1 cup chocolate batons or semi-sweet chocolate
  • 1 tbsp milk (for egg wash)
  • Confectioners’ sugar (for dusting)


Instructions

  1. In a mixing bowl, combine the flour, sugar, salt, and yeast. Gradually add cold milk until a dough forms.
  2. Knead the dough on a floured surface until smooth, then refrigerate for at least 30 minutes.
  3. Flatten softened butter between parchment sheets into a rectangle and chill.
  4. Roll out the dough into a rectangle; place chilled butter in the center and fold the dough over it.
  5. Roll out again and fold into thirds like a letter; refrigerate after each fold.
  6. Roll out the laminated dough again; cut triangles and place chocolate at the base before rolling tightly.
  7. Let shaped croissants rise until doubled in size, about one hour.
  8. Preheat oven to 375°F (190°C). Brush with egg wash and bake for about 20 minutes until golden brown.
