Ingredients
- Dark greens (spinach, kale, chard)
- 1 navel orange
- 1 Cara Cara orange
- 1/4 cup thinly sliced red cabbage (optional)
- 1/2 cup toasted pepitas
- 1/4 cup dried cranberries or cherries
- 1/4 cup crumbled feta cheese (optional)
- 2 Tbsp chopped fresh green onions, chives or dill
- 1/4 cup Canola Oil
- 1 Tbsp cranberry orange infused vinegar or white apple vinegar
- 1 Tbsp Orange Juice Concentrate
- 1 Tbsp Honey
- Salt & Pepper to taste
Instructions
- Prepare the oranges by slicing off the top and bottom before removing the peel and cutting into slices.
- On a large plate or platter, layer dark greens, followed by red cabbage if using. Add orange slices and top with pepitas, cranberries or cherries, feta cheese, and fresh herbs.
- To make the vinaigrette, combine canola oil, vinegar, orange juice concentrate, honey, salt, and pepper in a screw-top jar. Shake until well mixed.
- Serve the salad with the vinaigrette on the side.
