  • 1 3/4 cup fresh milled soft white wheat (finely milled)
  • 1/2 cup sugar
  • 1 tbsp. baking powder
  • 1/2 tsp. salt
  • 1 1/2 tsp. pumpkin spice
  • 1/2 cup pumpkin puree
  • 6 tbsp cold butter (very cold, grated)
  • 3 tbsp. half and half
  • 1 large egg
  • 1 cup powdered sugar
  • 3 tbsp. half and half
  • 1/4 cup arrowroot powder (or 1/4 cup more powdered sugar if you don't have arrowroot powder)
  • 3/4 cup powdered sugar
  • 1 tbsp. pure pumpkin puree
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. nutmeg
  • 1/8 tsp. ginger
  • 2 tbsp. half and half


Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine sugar, fresh milled soft white wheat, baking powder, salt, and pumpkin spice. Mix until well combined.
  3. Grate the very cold butter into the dry mixture using a grater. Combine it into the dry ingredients using your hands until there are no clumps left, resembling pie crust or biscuit dough.
  4. In a separate bowl, whisk together pumpkin puree, half and half, and egg. Ensure everything is fully combined before moving on.
  5. Add the wet mixture to the dry ingredients. Mix gently until just combined—be careful not to over-mix!
  6. Prepare a clean counter dusted with flour. Turn out the dough onto this floured surface and form it into a circle about 1 inch thick. Use a knife to cut it into 8 triangles.
  7. Place the scone triangles on the prepared baking sheet. Bake for about 15 minutes or until they turn golden brown. Allow them to cool completely before icing with glaze or drizzle.
