  • pounds sirloin or ribeye steak, cut into bite-size pieces
  • 10 ounces rigatoni pasta
  • 1¼ cups heavy cream
  • 1¼ cups whole milk
  • 2½ cups shredded mozzarella cheese
  • 5 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1¼ tablespoons olive oil
  • Salt and black pepper to taste
  • 1¼ teaspoons Cajun seasoning (optional)
  • ⅝ teaspoon Italian seasoning
  • 2 tablespoons chopped fresh parsley
  • Pinch of crushed red pepper flakes (optional)


Instructions

  1. Cook rigatoni in salted boiling water until al dente. Reserve some pasta water before draining.
  2. Pat steak dry and season with salt, pepper, and optional Cajun seasoning.
  3. Sear steak in a skillet with olive oil and part of the butter until browned; transfer to a plate.
  4. In the same skillet, melt remaining butter, add garlic, then cream and milk; whisk until warm.
  5. Stir in cheeses until melted and smooth; season as desired.
  6. Toss cooked rigatoni in the sauce, adding reserved pasta water if necessary.
  7. Serve steak bites alongside rigatoni, garnished with parsley.
