  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2/3 cup whole wheat flour (for crumble)
  • 1/4 cup melted butter (for crumble)
  • 1/2 tsp cinnamon (for crumble)
  • 4 tbsp brown sugar (for crumble)


Instructions

  1. Preheat the oven to 350°F and prepare a muffin pan.
  2. In a saucepan, boil apple cider until reduced by half; mix in melted butter.
  3. Whisk together brown sugar, eggs, yogurt, and vanilla in a bowl; add the reduced cider.
  4. In another bowl, combine flour and spices; fold into the wet mixture.
  5. Fill muffin tins slightly over 2/3 full and bake for about 18-20 minutes until golden.
