For the Cookies:
1 cup gluten-free oats
3/4 cup pumpkin puree
1/4 cup maple syrup
1/2 cup chocolate chips
1 teaspoon ground cinnamon
Dash of salt


Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, combine the gluten-free oats, pumpkin puree, and maple syrup. Stir until well mixed.
  • Add the cinnamon and a dash of salt, mixing until evenly distributed.
  • Fold in the chocolate chips.
  • Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet and gently flatten them slightly with the back of a spoon.
  • Bake for 12–15 minutes, or until the cookies are set and lightly firm.
  • Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
