  • 4 large tomatoes
  • 4 large bell peppers
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Salt and pepper to taste
  • 1 cup water


Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Cut the tops off the tomatoes and bell peppers, then scoop out their insides and set aside.
  3. In a pan, heat olive oil over medium heat. Sauté onion and garlic until fragrant.
  4. Add the rice, parsley, mint, salt, and pepper; stir to combine for a few minutes.
  5. Mix in one cup of water and the reserved vegetable insides; cook until the rice is halfway done.
  6. Stuff each tomato and bell pepper with the rice mixture and place them upright in a baking dish.
  7. Cover with their tops, drizzle with olive oil, and bake for about 1 hour until tender.
