  • 1 cup (100g) instant oats
  • ¾ cup (90g) whole wheat flour or gluten-free flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp ground cinnamon
  • ⅛ tsp salt
  • 2 tbsp (28g) coconut oil or unsalted butter, melted and cooled slightly
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • ½ cup (120mL) pure maple syrup (room temperature)
  • ¾ cup (68g) freshly grated carrots (about 1 smallish medium, peeled first!)


Instructions

  1. In a medium bowl, whisk together oats, flour, baking powder, cinnamon, and salt.
  2. In another bowl, mix melted coconut oil or butter with the egg and vanilla. Stir in the maple syrup until well combined.
  3. Combine wet and dry mixtures gently until incorporated, then fold in grated carrots.
  4. Chill dough for 30 minutes.
  5. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  6. Drop rounded scoops of dough onto the prepared sheet and flatten slightly.
  7. Bake for 12-15 minutes until lightly golden around the edges; cool before serving.
