  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon


Instructions

  1. Mash the bananas until you have 2 1/4 cups.
  2. In a large bowl, combine flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream together butter and both sugars; then add cinnamon, eggs, vanilla, and mashed bananas.
  4. Gradually mix the banana mixture into the dry ingredients until just combined.
  5. Pour the batter into a greased pan and place it on a trivet inside the Instant Pot with one cup of water.
  6. Cover the pan with foil and create a foil handle; seal the Instant Pot lid.
  7. Cook on manual mode for 50 minutes and do a quick release after cooking.
  8. Carefully remove the pan using the foil handles and let it cool before slicing.
