  • 2 medium potatoes, diced
  • 1 cup green beans, chopped
  • 1 cup peas (fresh or frozen)
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 tablespoon tomato paste
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped


Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Sauté the chopped onion and minced garlic until onions are translucent (about 5 minutes).
  3. Add sliced carrots and diced potatoes; cook for another 5 minutes.
  4. Stir in green beans, peas, and bell pepper.
  5. Pour in vegetable broth and add tomato paste, soy sauce, thyme, and rosemary. Mix well.
  6. Bring to a boil, then reduce heat to low and simmer for 30-40 minutes until vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.
