  • 1 large egg
  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots

  • 1 large egg yolk
  • 0.5 cup granulated sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In one bowl, mix together brown sugar, salt, vanilla extract, and butter until combined. Beat in the egg until fluffy.
  3. In another bowl, whisk flour, cinnamon, nutmeg, and baking powder together. Gradually add this mixture to the wet ingredients until just combined, then fold in grated carrots.
  4. In a separate bowl, beat cream cheese with granulated sugar until smooth, then add egg yolk and mix until incorporated.
  5. Pour half of the carrot cake batter into the pan, followed by the cream cheese mixture, then top with remaining batter.
  6. Bake for about 30 minutes or until golden brown and a toothpick comes out clean. Allow to cool before slicing into squares.
