  • 12 oz fresh raspberries
  • 2 large fresh mangoes (cubed)
  • 1 lb fresh strawberries (cubed)
  • 1 lb green grapes (halved)
  • 1 lb red grapes (halved)
  • 4 cups apple juice
  • 4 packets unflavored vegan gelatin
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon juice


Instructions

  1. Prepare the fruits by washing and cutting them into uniform sizes.
  2. Lightly spray a bundt pan and set aside.
  3. Combine 1 cup of apple juice with the gelatin in a bowl. Boil the remaining juice with sugar and lemon juice, then pour it over the gelatin mixture and whisk until dissolved.
  4. Layer the prepared fruits in the bundt pan in the order of raspberries, mangoes, strawberries, green grapes, and red grapes.
  5. Pour the gelatin mixture over the fruits until fully covered. Refrigerate for 3-4 hours until set.
  6. Unmold by briefly placing the bundt pan in hot water and invert onto a serving plate.
