  • 2 ½ cups all-purpose flour
  • 1 lb ground lamb or beef
  • 1 medium onion, finely chopped
  • 2 tomatoes, peeled and chopped
  • ¼ cup tomato paste
  • Olive oil
  • Fresh parsley
  • Red pepper flakes
  • Paprika
  • Cumin
  • Allspice
  • Cinnamon


Instructions

  1. In a bowl, combine warm water and yeast; let sit until foamy (5–10 minutes).
  2. Mix flour and salt in another bowl; incorporate the yeast mixture and olive oil until a shaggy dough forms. Knead for 5–7 minutes until smooth.
  3. Place the dough in an oiled bowl, cover it, and let rise until doubled (1–2 hours).
  4. Combine ground meat, onion, tomatoes, tomato paste, parsley, and spices in a bowl.
  5. Preheat oven to 450°F (230°C). Roll out the risen dough into thin circles.
  6. Spread the meat mixture evenly over each circle and bake for 10–15 minutes until golden brown.
